Chocolate Banana Cake

A scrumptious snack that can easily be transformed into a delectable dessert by adding a dollop of fresh organic cream and some juicy berries!
100g Dark Chocolate (the higher the cocoa solids the better, I use 85% or 90%)
75g Unsalted Butter
3 Ripe Bananas
1 tbsp Cocoa Powder
1/2 tsp Bicarbonate of Soda
3 Free-Range Eggs
1. Preheat the oven to 180°C/160°C(fan)/Gas 4/350°F, grease and line a baking tin or cake tin.
2. Melt the chocolate and butter together over a gentle heat. Meanwhile mash the bananas with a fork.
3. Add the mashed banana to the chocolate mixture, along with the cocoa powder and bicarbonate of soda. Mix well.
4. Beat the eggs with a fork and temper in to the batter.
5. Pour into the tin and bake for 15-20 mins, until the top is set. Serve warm as a dessert or store in the fridge for a gooey chocolatey snack!
